Pixie Tangerines, Citrus Sunrise, & a Creamery Surprise!

Since the new year we’ve been crazy about citrus throughout the Bi-Rite Family of Businesses.  There are still over 20 varieties of citrus on the shelves at the Markets and some great surprises yet to come, but the season will start to wind down as we head into March. One of the most exciting parts of the California Citrus Experience celebration at Bi-Rite is that it comes to an end with one of the best-tasting varieties of the entire season: the Pixie Tangerine, a small, seedless tangerine with wonderful juice and super sweet flavor!

Pixie Tangerines

Led by Jim Churchill “The Tangerine Man,” a group of dedicated small farmers work collaboratively to get these sugar bombs to markets throughout California. Located in the mountains of Ojai, California, these 40 farms (some as small as just a handful of trees) harvest their fruit when it’s at peak flavor. We’ve been lucky enough to build a solid, farm-direct relationship with Churchill Orchard that allows us to get freshly-picked organic Pixies delivered straight to the markets. You would think that a piece of fruit that tastes so good would be sold all over the place, but this variety has its limitations, which turns off a lot of commercial growers. The trees take at least 4 years to produce fruit after planting, and closer to 8 years before they produce really healthy crops. Plus the Pixie is an “alternating bearing” crop, which means it has a heavy harvest one year and a light harvest the next. But the harvest is just starting this year, so we’ll have fruit in both Markets through March!

Drink Strong

Strong_beer_ webWest Coast beer drinkers love strong beer, as evidenced by popular breweries in California known for their IPAs.  Breweries including Lagunitas, Stone Brewing Co., Ballast Point, and Bear Republic are all well-known for their expertise with India Pale Ales. However, it was brewmaster Vinnie Cilurzo of Russian River Brewing who took it to the next level when he created Pliny the Elder, the first Imperial IPA (or Double IPA, as it is more commonly known). The double refers to the two letter I’s in the Imperial IPA (IIPA) and not double the strength or hops. Imperial IPAs  have a lengthier brewing process and higher alcohol content, roughly 10% ABV versus IPAs at 7.5% ABV.

Though Pliny the Elder was the first of its kind and the most popular (we sell out in one day at our Mission location), there are plenty of other California breweries that are putting their own twist on this style and making wonderful Imperial IPAs that should be celebrated. Easier to acquire than Pliny, they’re uniquely delicious and drinkable in their own right.  Next time you’re in the Markets, “Drink Strong” and choose a new Imperial IPA.

Eat Like a King With Parmigiano Reggiano

At a time when our food system is increasingly overrun with processed products and traceability is a growing concern, we’re shining the spotlight on one of the most traditionally crafted products at our Markets. Parmigiano Reggiano is called the King of Cheese for excellent reason — it’s been made in the same region for almost a thousand years! We work with one of the most reputable importers of Italian cheese to provide our guests with Parmigiano Reggiano that’s produced at one single farm in the heart of Emilia-Romagna. Daniele Caldera operates the farm, where he raises the cows and makes the cheese. He even lives above his small creamery, where he makes no more than six wheels a day by using time-honored techniques.

Parmigiano Reggiano is a staple of any Italian kitchen; it’s a cheese that’s perfect for anytime of the day. You can of course grate it over a bowl of fresh pasta, but we also love to be adventurous with it:

  • Slice it with pears for a satisfying breakfast
  • Grate it over soft scrambled eggs with chives for an easy brunch
  • Mix it with Medjool dates and Massa Organic’s almonds for a savory afternoon snack
  • Shave it into a farro salad with citrus vinaigrette and fresh herbs
  • Drizzle it with Bi-Rite Public Label Aged Balsamic Vinegar

Remember that we crack wheels of Parmigiano Reggiano at each Market every week, so the pieces available are always fresh (follow us on Instagram @biritesf to see video of our cheesemongers cracking the wheel, and much more!). Our big 80-pound wheels are aged for a minimum of 24 months, though usually they are closer to 28 months. With a big wheel of this kind, a longer aging process allows for the development of deeper, more complex flavor. Daniele’s cheese is brothy and bright with notes of fruity pineapple, and the finish is long and deep. We also shred and package the cheese – our shredded Parmigiano Reggiano is the real deal, and so much better than anything that comes out of a green can.

Cheese Experience

Looking for a spin on the game day classics? There’s still time to have Bi-Rite Catering do the heavy lifting for you!  Our newest West Coast Craft: Beer & Cheese Tasting showcases some of California’s finest artisan cheeses paired with unique craft beverages from the West Coast and beyond.
