Their process of extraction is true to the origins and art of olive oil making. Unfiltered and unrefined, this extra virgin olive oil is fruity and intense, with hints of artichoke and greens. Peppery, bitter notes on the finish, but perfectly balanced and complex.

Pacific Sun: Pacific Farms is a woman-owned, family run, sustainable agricultural operation. Produced from select northern California Olives taken from the field and milled immediately, Pacific Sun Extra Virgin Olive Oil is additive free and 100% natural. Their Proprietor's Select Ascolana Extra Virgin Olive Oil is milled in the late fall to capture the unique characteristics of the Tehama County Ascolana olive. Grassy, forward, and fruity with a buttery body, peach overtones and a lively, peppery finish, this oil is perfect for finishing and dressing fine foods, breads, and cheeses. This oil pairs well with light red wines and white wines, especially Pinot Noir, Sangiovese, and Viognier.
