Sharing in LGBT Pride

The 2014 San Francisco Pride Celebration is coming up this weekend, June 28th and 29th. It’s one of our favorite times of the year because we get to join in the fun and festivities, watch the inspiring Dyke March pass through our neighborhood, and express our love and support for the LGBT Community.Our 18th Street Market is the place to be on Saturday; we’ve got everything you need to stay fed, hydrated and in good spirits for what promises to be a day of beautiful weather and celebration.

Easter Treats! Artisan-Made Chocolates & Baked Goods

Easter is this weekend, and we’ve got a ton of basket-worthy treats to help you celebrate!

PaintedEggsChocolat Moderne is a producer whose incredible chocolates I always bring in for holidays. Their flair for the decorative and decadent in both their product and packaging make them ideal candidates for an Easter basket centerpiece. This year we are stocking Chocolat Moderne’s Hand-Painted Purple Rose Swirl Egg, a sea-salted caramel with Halen Mon Sea Salt from the pure ocean currents of the Welsh Coast. We also have their Hand-Painted Yellow Rose Swirl Egg, a dark chocolate ganache from 72% Venezualan Cacao, and the 3-Pack of Hand-Painted Rose Swirl Eggs, which includes one each of the purple and yellow rose swirl eggs, as well as a pink egg with creamy dark chocolate ganache with raspberries. They are so beautiful they almost resemble fine painted china.

Frans1For chocolate bunnies, your first stop in our chocolate aisle is Fran’s Chocolates. Fran’s Dark Chocolate Bunny, an exceptionally smooth dark chocolate that balances subtly toasty notes with dark berry fruitiness, creates a luscious, long-lasting experience that closes on a note of bright citrus. It’s made with 38% cacao from single origin Venezuelan milk chocolate and is creamy and chocolaty with quiet notes of honey and caramel. And Fran’s also makes Easter eggs! Their Filled Easter Eggs are a decadent foil-wrapped collection of two peanut butter eggs, one hazelnut crunch egg and one caramel egg.

OliveBunnyPoco Dolce is a phenomenal San Francisco-based chocolate company whose confections we stock year-round. They are also getting in on the rabbit game for Easter with their amazingly smooth, hand-made Peanut Butter Rabbit, blending organic peanut butter with bittersweet chocolate and a touch of sea salt, and their beautiful, hand-crafted Olive Oil Bunny, made with California olive oil and a bittersweet chocolate that is velvety, rich and has a decadent texture you’ll remember long after Easter and spring have both passed by.

Rounding out our selection of Easter eggs are two other favorite chocolate producers of ours, world-renowned Vosges Chocolate and Bay Area legend Michael Recchiuti. We have Vosge’s The Goose’s Golden Eggs and their organic Wink of the Rabbit Caramel Eggs; Vosge’s deep, rich milk chocolate touched with soft caramel. From Recchiuti we’ll have the Egg Hunt Box, wherein Recchiuti’s egg-hunt designs adorn eight pieces of his signature Burnt Caramel Truffles. Each confection is a blend of Recchiuti’s dark, smokey caramel with 70% dark chocolate ganache-enrobed in semisweet chocolate.

This traditional Italian Easter Cake is the springtime counterpart of the popular Christmas dessert panettone. Starter Bakery’s version is a sweet bread coated with marzipan and studded with candied orange peel, almonds and pearl sugar. It’s hearty, filling and delectable – an Easter treat to be shared. And from the Bi-Rite Creamery, we will have our beautiful and delicious take on the traditional Easter treat of Hot Cross Buns. Ours are made with a rich, buttery yeasted dough, crossed on top and finished with warm spices and raisins. Bi-Rite Creamery’s Hot Cross Buns will be available Saturday and Sunday, April 19-20 ONLY, so don’t miss these iconic holiday buns!

Join Us in Welcoming these New Products!

I’ve brought in numerous new products to both our 18th Street and Divisadero Street Markets recently, and I to encourage you to come by and explore them! They’re highlighted in displays marked “New and Exciting!” But if you can’t find what you’re looking for, ask any of our Staff to help you and to share a taste–we’re all really thrilled to welcome them to our shelves.

Some of the new items about which I’m the most excited include:

bianco shelfBianco DiNapoli Whole Peeled & Crushed Tomatoes

Bianco DiNapoli Tomatoes are organically grown and harvested on Cliff Fong’s family farm in Yolo County, California. Within hours of harvest, these plum-shaped tomatoes are washed, steam-peeled and hand selected at the Olam Tomato Processors cannery in Williams, California.  The tomatoes resulted from a partnership between Robert DiNapoli and Chris Bianco, a James Beard award-winning chef and founder of the acclaimed Pizzeria Bianco in Phoenix, Arizona.

These are organic tomatoes at a great price. Chris’s inspiration has always been working with fresh product from local producers, and in this case he just wanted to make a darn good tomato. The whole tomatoes are good for any kind of sauce or soup, while the crushed tomatoes are great for heavily-seasoned or spicy dishes.

Moonshadow Grove California Extra Virgin Olive Oil

Moonshadow Grove is located in Oroville, Butte County and is one of California’s historic premier organic olive groves. The organic and sustainably-grown olives on this grove are all hand-picked and sent to the mill within twenty-four hours of harvesting, resulting in their one-of-a-kind Ascolano Olive Oil that is very floral and aromatic with hints of stone and tropical fruit. The Miscela Blend is a custom blend of Mission, Manzanillo, and Ascolano olives; it has a buttery texture and notes of bitter greens and green olive, followed with flair by a peppery finish.

The Jam Stand is Brooklyn’s happiest food company.  It began when two best friends breathed life into their concept to create a food company that’s a true reflection of themselves and their community.  They push the limits of what jam can be by combining unique flavors like blueberry and bourbon, Sriracha and peach, and banana and lime with a splash of rum.  Using fresh fruit from local farms, Jess and Sabrina’s jams are vibrant and can be used in many applications.

C&B’s Old Fashioned Tonic

Founder Erin Cochran makes this wonderful tonic in San Francisco’s Mission District, not far from our 18th Street Market.  It’s made with Cinchona bark (the natural form of quinine), pure agave nectar instead of corn syrup or cane sugar, and loads of citrus and lemongrass. C&B’s is perfect for cocktail enthusiasts, pairing delightfully with most base alcohols, while also standing on its own as a perfect substitute for an alcoholic beverage. Its complex flavor alone will whet your palate, and it will enliven any spirituous drink.

Bagels from Authentic Bagel Company

Breakfast-time guests on our grocery floor know that we make the most delicious bagel sandwiches in the Mission. In our quest to make them even better, we’ve recently switched bagel suppliers to Authentic Bagel Company. Authentic was recommended to us by several members of our staff and several of our longtime guests, so we requested some samples and found that everyone was blown away by their taste and texture.

Authentic was started by brothers Jason and Mark Scott, who have been working closely together in the food industry for ten years. While helping pack up their childhood house for their family’s move out west from the East Coast, the brothers stumbled upon a recipe handwritten by their grandmother for a bagel with a starter dough (a dough full of natural leavening yeasts and delicious fermentation that creates complex, flavorful, crusty breads). The brothers have added their own personality to their grandmother’s recipe by using a San Francisco sourdough starter, marrying the two coasts they call home to create a unique taste of their own. With its chewy crust and ideal density, and for only $0.99 for each bagel, this is a great bagel at a great price. And perhaps most exciting of all, Bi-Rite is the exclusive retailer/market to sell these bagels in the Bay Area. So stop in, grab one and ask our friendly Deli staff to use it to make you a sandwich!

I’ve had a great time getting to know Hot Cakes founder Autumn Martin, who is one of the nicest people I’ve ever met. And to top it off, Hot Cakes makes an absolutely fantastic product–one of the best caramel sauces you’ll ever try!  Made with lots of love in very small batches, the flavors of this caramel sauce are perfectly balanced–not an easy feat when marrying complex citrus with the sweetness of caramel.  Autumn has built a brand that is committed to supporting local and organic farming through the creation of fine, innovative desserts, and she has spent many hours volunteering on farms both locally and abroad to understand the true meaning of sustainable agriculture. Her commitment to building relationships with farmers, friends, customers, and purveyors is inspiring.

This luscious caramel sauce has perfectly-balanced flavors and a phenomenally pleasing texture. Putting it on top of vanilla ice cream would be an obvious choice, but for a decadent indulgence, I’d also suggest trying it with Bi-Rite Creamery‘s Honey Lavender, Vanilla, or Ginger Ice Creams, all available in our ice cream case.

New Nana Joe’s Chef’s Blend–Featuring Sam Mogannam!

Local granola producer Michelle Pusateri of Nana Joe’s is a great friends of ours, and she makes wonderful products that we really love and are huge favorites of our guests.  Based here in San Francisco, Michelle exemplifies the small, hands-on, community-oriented approach that we admire when producing her outstanding granola. We’ve been stocking Nana Joe’s since they first opened their doors, so we’re very excited to have collaborated with Michelle in a new way to produce a great new granola.

Each month, Michelle collaborates with a San Francisco chef to create a special Chef’s Blend Granola. She’s already worked with some of the best chefs in San Francisco, and now we can add our very own Sam Mogannam to that list. Sam is not just the founder of Bi-Rite Market, he’s also my brother! He’s also a fixture in and passionate supporter of the local food community, and a mentor for budding food entrepreneurs. Before founding Bi-Rite, Sam was a chef at his own restaurant, and co-author of Eat Good Food, the grocery buyer’s guide that is available on the shelves at our Markets.

We’re honored to have Sam join the distinguished ranks of San Francisco chefs who have created granola recipes for Nana Joe’s Chef’s Blends. We’re thankful to count Michelle and the crew at Nana Joe’s as friends and grateful that we get to stock their granola on our shelves. Says Sam, “I wanted to work with Nana Joe’s because I know the quality and integrity of the final product is guaranteed to be GOOD. The ingredients I chose are an inspiration from my Mother and a blend of my favorite Mediterranean flavors. Enjoy!”

Unforgettable Valentine’s Day Sweets for your Sweetie

Valentine’s Day approaches! I really enjoy sourcing our chocolate selection here at Bi-Rite, with a goal of providing a range of sweets for every taste, and helping our guests to find something special to share with loved ones. Chocolate is a sure way to put a smile on someone’s face and make their day truly special.

Chocolat Moderne is a producer I love to work with for special holidays, and they never disappoint. Their “Baby, you’re the one!” assortment has dark, white, and milk chocolate hearts with pink and red swirls that look like the unfolding petals of a rose. The flavors include passion fruit cardamom caramel, raspberry rendez-vous dark ganache, sea salted caramel, and a dark ganache laced with Tuthilltown Spirits Baby Bourbon. A truly stunning and unique collection!

You can always find chocolates on our shelves from renowned local chocolatier Neo Cocoa, named by Dessert Professional as one of the “Top Ten Chocolatiers in North America.” This February we’re excited about their Neo Cocoa Dark Raspberry Truffles, which combine bold, red raspberry with rich, dark chocolate for a classic pairing of Valentine’s flavors. Neo Cocoa are known for their luxuriously melt-in-your-mouth chocolate experience.

For a lovingly hand-crafted option that makes a truly special Valentine’s gift, we’re thrilled about one of the newest additions to our chocolate selections, gâté comme des filles. These exquisite truffles are made to order in small batches each week by master chocolatier Alexandra Whisnant, who trained for her patisserie degree in France before working for Berkeley’s world-renowned restaurant Chez Panisse. Each ganache is hand-whisked to create a filling both fluffy and rich, with flavors that peak within the first few days after production. This month our shelves will be graced with some surprise special Valentine’s flavors created by Alexandra for the holiday, so come by either of our Market locations to pick some up. These truly exceptional and special treats are meant to be savored.

Celebrating SF Made!

 

Display 1It’s that time of year! The Fancy Food Show is back in our beloved city by the Bay. As food-lovers, we consider ourselves fortunate that this premier event for specialty food makers comes to San Francisco every year. And as the Grocery Buyer for Bi-Rite, it’s always a thrill to try new products from outstanding food artisans, and to welcome them to our stores to meet our staff and peruse our shelves.

Those shelves are stocked full of delicious foods from great local producers, and to celebrate all the visitors from near and far to the Fancy Food Show, we are highlighting some of our local favorites this month. Visit the displays marked “SF Made” and you’ll see why!

Boozely'sBoozely’s Pickles are made by Brad Boozely, one of our neighbors on 18th Street. Brad comes from a long line of picklers and his love for the art shows in the crisp, tasty crunch of his pickles. He supports local farmers with his selection of produce.

We Love Jam is a two-person operation where literally everything, from recipe development to cooking to graphic and web design, is done in-house. The owners have forty years of combined experience experimenting in the kitchen, and work directly with local family farms to source the best fruit possible for their amazing jams.

Hey Boo Coconut Jam, one of our most popular “SF Made” products! Coconut jam, also known as Srikaya in Indonesia, has been consumed for hundreds of years in Southeast Asia. Hey Boo’s San Francisco version is slow-cooked in in small batches using high-quality natural ingredients. It has a silky smooth texture with a golden color and a rich creaminess that is achieved by cooking the ingredients according to traditional Srikaya-making techniques.

Dandelion Chocolate are neighbors and great friends to Bi-Rite Market, and are a favorite among our guests and staff. From their location in the Mission District, they operate a bean-to-bar chocolate factory where temper small batches of beans and then mold and package each bar by hand. They have close relationships with their cacao growers and have prioritized sustainability since opening in 2010. Stop by for a visit while you’re in the neighborhood!

Kika’s Treats, another neighbor, was founded in 2006 by Cristina Arantes, who produces pure chocolate-covered confections using a variety of alternative sweeteners and is committed to using the finest locally-sourced ingredients to make her delicious treats. She also gives back to the community through in-kind donations to local non-profits by donating 5% of net profits to La Cocina, a non-profit food incubator in San Francisco that helps low-income entrepreneurs start and grow their businesses.

All of these products will be highlighted at both of our Market locations, so stop by for a look, chat and taste. We look forward to sharing these products from our friends and neighbors with you!

Great Last-Minute Gifts: Holiday Sweets and Seasonal Treats!

Every year around holiday time, I get to pick out some excellent cakes and sweets for our shelves. There are some perennial favorites that are eagerly anticipated every winter, but I’m always on the lookout for interesting new finds. We have a few of each this Christmas, and they’re great for warming your hearth and home this holiday season.

Although we sell wonderful locally made panforte by Napa Cakes (more on that below), we thought it would be fun to include more panforte from its birthplace in Tuscany, so we introduced Pasticceria Sinatti Panforte Margherita. Panforte is a specialty of the southern Tuscan city of Siena, where Italians have been making it since the 13th Century. It is a flat, dense, round cake made with honey, hazelnuts, almonds, candied citron, citrus peel, cocoa, and spices. It contains a very small amount of flour, just enough to hold the cake together. After baking, panforte becomes firm and chewy. Sinatti’s panforte is sold in slices in Sienese bakeries and coffee houses. The Panforte Margherita is a traditional panforte made with nuts and candied fruit.

While the Panforte Margherita is fantastic, there’s a reason that we’re still stocking the Panforte by Napa Cakes. This local spin on the classic is an artisanal panforte that is handmade to order by Marge Caldwell in Napa Valley. It’s densely rich and chewy, made with organic raisins, almonds and hazelnuts from California. It’s excellent when paired with dessert wines and perfect on a cheese plate.

LambertWhiteFruitcakeRobert Lambert is a local producer whose products we stock year round, but he also provides us with excellent cakes especially for the holiday season. He’ll tell you that his Robert Lambert Dark Fruit Cake & White Fruit Cake are the best of their kind, and while he might be a little biased, we happen to agree with him. Robert’s White Fruit Cake, a slight improvement over his grandmother’s recipe, is a lovely blend of fine Brazil nuts, local pecans and whole blanched toasted almonds. Deeply ripe oranges from DeSantis Farms are squeezed for juice just before being added. Robert uses his own candied young ginger along with candied bergamot, Rangpur lime, Meyer lemon and blood orange peels. Each cake is soaked in the finest French cognac, topped with a California bay leaf and candied white grapefruit peel star. His Dark Fruit Cake includes a blend of holiday spices, 10-year-old Ficklin port, local nuts, oranges from DeSantis Farms, dried fruits, black figs soaked in Pear William eau de vie, and Kadrawi dates from Flying Disc Ranch. Robert also includes his rare candied Texas lemon and Buddha’s hand citron, bergamot, blood orange and white grapefruit peels, and candied young ginger. Each cake is soaked in Jack Daniels bourbon whiskey, topped with California bay leaf and candied blood orange peel star.

Another great option for holiday sweets are the Lebkuchen by Lecker Lee. Sandy Lecker Lee makes traditional German rich spiced treats that are a cross between a cookie and a cake. Lebkucken is a traditional German gingerbread that dates back to the Middle Ages. The cookie is made of 40% almonds and hazelnuts, with Sandy adding honey, candied citron and orange peel. These classic tins contain cookies lightly brushed with powdered sugar glaze; packaged in beautiful, highly decorative tins, they make excellent gifts.

For a more modestly apportioned treat, we’re very fond of Claire Keane’s San Francisco-made Claire Squares. Her Christmas offerings on our shelves include Brandy Butter, a wonderful Irish dessert topping traditionally eaten with bread pudding or fruit cake (like the Lambert cakes mentioned above. It’s made with just cognac, butter, sugar and salt. We’re also selling Claire’s Plum Pudding, a traditional Christmas treat made up of a medley of dried fruits soaked in Irish whiskey with spices, butter, and molasses and then aged for three months.

And finally, for one last holiday treat, we’re stocking a traditional winter delicacy, Marrons Glaces. Chestnuts are candied in hot vanilla-flavored sugar syrup and then glazed. The ones on our shelves are from Corsiglia, the premier Marrons Glaces manufacturer in France.

Our shelves are packed full of these beautiful holiday treats, so please come by our Markets to take a look. You can also order lots of these and other exceptional gift items online for pickup. The Best Chocolates I’ve Ever Tasted

GCDF2We stock a  wide assortment of excellent local artisanal chocolates at Bi-Rite, and as grocery buyer it’s my privilege to taste dozens of varieties in order to select the finest options for our stores. This year I was blown away by the chocolates crafted by gâté comme des filles. They’re something special, and I’m truly thrilled to bring them to our guests. The exquisite offerings from this small Oakland-based company will grace the shelves of both of our Market locations just in time for the holidays and are, quite simply, the best chocolates I’ve ever tasted.

She founded gâté comme des filles just this year and the company is in full swing, lovingly crafting the freshest chocolates you’ll ever taste.

Alexandra’s chocolates are a feast for the eyes as much as for the palate. Before you luxuriate in their rich  filling and to-die-for texture, take some time to appreciate their aesthetic beauty. Each design is bright and expressive, each piece glittery and unique. They’re so easy to covet, you might forget that their ultimate purpose is to be enjoyed for their sublime taste! But don’t wait too GCDF5long, for these marvelous chocolates, created by this master of the field, need to be eaten fresh in order to be optimally enjoyed; Alexandra’s recommendation is that they be eaten within five days of production. Without the constraint of prolonged shelf life, Alexandra is able to freely express the full potential of her ingredients, leading to the creation of vibrant flavors and pleasing textures not normally available in store-bought confections. As a result, they will not always be available to purchase and pre-orders are highly recommended. They make for a holiday gift like no other, but are meant to be promptly and thoroughly enjoyed, and we recommend that you encourage anyone fortunate to receive them as a gift to do just that.

This weekend, Alexandra will be spending time at both of our market locations, where you can taste and discuss her chocolates with her. She’ll be at our Divisadero store from 2-5pm on Saturday, November 23rd and at our 18th Street store from 2-5pm on Sunday, November 24th. If you miss out on these tastings, don’t despair – the chocolates will be available on our shelves throughout the holiday season, and we’ll be offering several more chances to try them during Christmastime. New PUBLIC Label Jams

This year’s stone fruit harvests have been incredible! To take advantage of the bounty and stellar quality of the seasonal fruit from our local producer partners Masumoto Family Farm, Full Belly Farm, and Van Dyke Ranch, we have created three new preserves for our PUBLIC Label line.

PUBLIC Label Masumoto Nectarine Preserve
A lot of people worked together to create this wonderful nectarine preserve. The recipe was developed by our very own Shakirah Simley. Shakirah is a jamming expert and recent Zagat 30-Under-30 Food-World Up-and-Comers honoree, as well as Community Coordinator for Bi-Rite. She went down to Monterey to collaborate with Jordan Champagne of Happy Girl Kitchen to produce this awesome preserve.

The fruit comes from Masumoto Family Farm in FresnoDavid Mas Masumoto and his family have been farming in Fresno for more than 100 years! They are viewed as pioneers among their peers for farming the best-tasting nectarines and peaches in California. Their farming is environmentally responsible, economically viable, socially just, and the flavor profile of their peaches and nectarines is exceptionally rich and sweet. The consistency of this preserve has a loose-set texture, due to an extremely low sugar content. Mas’ Le Grand Nectarines are naturally very sweet, and Shakirah carefully ensured that the flavor profile of his fruit was highlighted. The result brings the best Mas’s Le Grand Nectarines to a spreadable fruit that’s perfect with scones, muffins, or on toast.

PUBLIC Label Shak’s Rustic Peach Preserve
Another preserve created with guidance and recipe development from Shakirah Simley, in addition to production from Jordan at Happy Girl Kitchen. Simon, who heads up our Produce Team, sourced the organic peaches from Full Belly Farm in the beautiful Capay Valley (Northwest of Sacramento). Full Belly Farm has been certified organic since 1985, and they strive to support local food systems and create a strong local food economy.  The variety of peach used in this preserve is the Sun Crest Peach–a freestone peach that has a bright-red blush over its yellow skin and is fragrant and juicy. This is a chunky, spreadable preserve that showcases the bright flavors of the Sun Crest Peach, with added zip from lemon and orange zest.

PUBLIC Label Royal Blenheim Apricot Jam
Our collaboration with Happy Girl Kitchen and Van Dyke Ranch in Gilroy has produced a fantastic jam. The rich fruit, with a perfect balance of sweet and tart, is the very essence of an ideal apricot. There is no better fruit than a Royal Blenheim Apricot to make the transition from whole fruit to luscious jam. On toast, mixed with yogurt, or as a glaze on a pork loin, ways to enjoy this is limited only by your imagination!

PUBLIC Label Recipe: Sam’s Kimchi Fried Rice

Great news, fermentation fans! Inspired by an over-abundance of ‘couve tronchuda’ (Portuguese cabbage) at Mariquita Farm, we’ve created our favorite Korean condiment: Bi-Rite PUBLIC Label Kimchi! Farmer Andy at Mariquita is known for growing interesting and elusive European produce varietals; his enthusiasm piqued our interest in this rare and special cabbage. Couve tronchuda has tall, bright green leaves with thick, fleshy white ribs; it’s generally considered sweeter and more tender than your average cabbage. Although traditionally used in the Portuguese soup caldo verde, we decided to go the raw and fermented route.

Our recipe features organic daikon and carrots from Lakeside Farms, giving the kimchi a bit more heft and crunch. The Bi-Rite spin on this banchan classic is crisp and refreshing, with a tangy pop of fresh ginger and a hint of spice. For an easy weeknight meal, dollop atop hotdogs, fold into a spring frittata, or stir into your favorite hot noodle soup.

And for a super adaptable, comforting dish, try your hand at Sam’s Kimchi Fried Rice—makes a great meal by mixing in whatever meats or vegetables are sitting around the fridge!

Sam’s PUBLIC Label Kimchi Fried Rice
Serves 2

Ingredients

2 cups white rice, cooked and cooled

1 cup broccoli florets, roughly chopped and steamed

1/2 cup PUBLIC Label Kimchi, coarsely chopped

2 eggs, beaten with 1 TBSP soy sauce

2 TBSP pure olive oil or other neutral oil

1 tsp sesame oil

Directions

  • Heat sesame oil and olive oil in a large skillet.
  • Add rice and fry until hot.
  • Add kimchi and broccoli, sauté until heated through.
  • Add soy sauce-egg mixture, sauté until eggs set, about 2 minutes.
  • Serve immediately!
