Bi-Rite From-Scratch: Preserving Our Local Economy!

Every time you open a jar of Bi-Rite jam, you become a part of our mission of “creating community through food.”

Our Producer Buyer, Simon works directly with our farmers to source the ripest peak season fruit, that is then delivered to our chefs within 24 hours of harvest. Our relationships with some of the most respected farmers in Northern California means that the fruit going into our preserves is always single-varietal, single-farm produce that we’re over-the-moon to be sharing with you all.

Beyond just preserving beautiful and beloved local fruit that would otherwise leave us much too soon in the fleeting days of summer, Bi-Rite Preserves are about elevating unique and flavorful varietals of fruit using our Chefs’ tried and tested recipes.

Our Peach Preserves from the Masumoto Family Farm  are a perfect example of that communion of fruit, farmer and chef. Made from some of the best peaches in the world and grown by a California farming family that cares about their community and the future of agriculture enough to write bestselling books on it and processed at peak ripeness by our Bi-Rite Chefs. All so that you can crack open a jar of summertime peach goodness, all the way into the foggier days of fall.

We know there’s nothing quite like biting into a perfect summer peach, but we’re hoping that diving into a jar of our preserves will come in a close second.

Our Preserves are made in very limited quantities and only available as long as supplies last, so stop by the Markets and snag your jar of single-varietal fruit goodness while you can! Or, just go ahead and have them delivered right to your doorstep via Instacart.

We also lined up a few recipes for you, in case swirling ’em into oatmeal and slathering ’em onto toast just isn’t gonna cut it these days…

  1. Jessica Koslow of Sqirl’s cult-classic, highly Instagram-ed Jam-Stuffed French Toast with our Blackberry Preserve is the perfect indulgent brunch (just in time for the launch of her new cookbook too!)
  2. This Grown-Up Grilled Cheese with perfectly melty Brie and our Strawberry Preserves is everything we want for every meal.
  3. Lucky Peach understands the importance of Morning Buns, and then they add Apricot Jam to the equation. We’re swooning and they know it.
  4. We’re adults and sometimes, we like a good cocktail. Peach Bourbon Cocktail with our Peach Preserve? Yes please.

Bi-Rite’s Best in Show: 2016 Good Food Award Winners

We’re thrilled to be showcasing some of our favorite Good Food Award-winning products over the course of the next 7 weeks, giving our guests a chance to taste 24 winners that blew us away at this years Awards. In 2016, the Good Food Awards granted awards to outstanding American artisan producers in 13 categories ranging from pickles and preserves to coffee, spirits, and ciders. The Good Food Awards is an annual recognition program celebrating food that is “tasty, authentic, and responsibly-produced.” Bi-Rite has been a strong supporter since the beginning, as we share many of the same values and ingredient-sourcing criteria.

Now heading into its seventh year, Bi-Rite is proud to be the Good Food Awards’ premiere sponsor, joining the effort to nurture the next generation of Good Food producers, and foster a food system that is fair, just, and sustainable. Our staff lends their tasting expertise each year to the Good Food Awards’ annual Blind Tasting, where over 200 expert judges from around the country taste the nearly 2,000 products submitted each year. In addition, Bi-Rite is proud to be a member of the Good Food Retailers Collaborative, a group of like-minded, independent retailers from across the country with a shared vision for creating community through Good Food.

Be sure to visit the Markets early and often, as the featured winners will rotate throughout the 7 weeks, and you’ll want to enjoy tastes of truly exceptional products from makers who go above and beyond simple craft to excel in social and environmental responsibility across the country. Here’s a sneak peak of what to look out for:

The Incredible, Responsible Egg

With spring arriving at the Markets in the form of local strawberries, beautiful asparagus, and tasty artichokes, it’s easy to forget that products like eggs have a season too! As the days grow longer and lighter, birds begin to lay their eggs in spring. Perhaps this is why we see eggs appear in spring celebrations and holidays, with eggs symbolizing renewal and rebirth. Today, our industrial food system has largely eliminated the seasonality of eggs, keeping birds indoors under artificial light so they continue to lay year round.

At Bi-Rite, we want to offer our guests a range of responsibly-sourced eggs from humanely-raised and treated animals. Our eggs are never sourced from birds that are subject to forced-molting (the practice of artificially provoking a complete flock of hens to molt simultaneously to stimulate production) or wing clipping. Likewise, all of our eggs are cage-free and free of hormones, antibiotics, and other additives. Whether you like your eggs hard-boiled, fried, or scrambled, reference our egg chart when shopping at our Markets so you too can understand the incredible, responsible egg:

Celebrating New Public Label Arrivals

Summer is here at Bi-Rite Market and we’re pleased as punch to announce the return of our Public Label Olive Oils, and a fantastic new collaboration with Poe Wines that created our Public Label Pinot Noir.  You may know that each Public Label bottle and jar contains ingredients sourced from our favorite farmers – we tell you who grew the ingredient, where it was grown, and how it turned into the final product you hold in your hand.  What you might not know is that Public Label is a whole lot more than a house brand.

Poe Grapes

Pinot Noir grapes at the Olcese Vineyard

Public Label is one of the many ways we “create community through food,” bringing our community together through incredible ingredients from fantastic farmers, invaluable expertise from our buyers and staff, inspiring craft and skill from our producers, all of which culminate in these incredible, high-quality products.  Our Public Label collaborations develop out of relationships with producers we admire most; just as we seek the finest sustainably-grown produce, responsibly-raised meats, and the best-tasting ingredients for our Markets, we constantly push ourselves to create new and unique Public Label products that are expertly crafted with flavors that stand out from the pack.

This year’s Public Label Olive Oils are as versatile as they are delicious, from salads to dipping to finishing.  In a marketplace that is saturated with olive oils (and we’ve tasted our fair share), we’ve hand-selected two outstanding olive oils that are exemplars in their category.  For our Public Label Pinot Noir, we’ve partnered exclusively with Poe Wines’ winemaker, Samantha Sheehan, to create a beautiful and versatile wine with some incredibly special Pinot Noir grapes.

Public Label Mission Extra Virgin Olive Oil$19.99 500ml
For our new “Everyday” Extra Virgin Olive Oil, we’ve collaborated with Stella Cadente who is based in Butte County, CA. This Extra Virgin Olive Oil is made from fully ripened 100% Heritage Mission Olives, the only American olive cultivar and part of Slow Food’s Ark of Taste. The olives are hand-harvested and pressed within hours, then stored in stainless steel tanks and being bottled to order to ensure freshness and full flavor. The olives are harvested at peak ripeness and the olives yield olive oil that is perfect for everyday use. It’s a very well-balanced, mild-medium intensity olive oil with undertones of butter, green grass, hints of spice that lingers on the palate, and a finish that is everything you taste in a ripe olive. Use in everything from dipping to preparing your favorite salad dressing!BiRite-HOLIDAY-2015-Grocery-004

New Release of Public Label Tuscan Style Olive Oil$24.99 750ml
We have collaborated with Divisadero guests Ben Herrmann and Evan Loewy from The Other Brother Company to produce our 2015 Tuscan Style Extra Virgin Olive Oil. Evan and Ben’s family planted their initial estate orchard when they were kids; they grew up with the trees, gaining experience in small scale agriculture and olive oil production.  It wasn’t until after college that they decided to switch directions and follow their passion for food. Inspired by their childhood experiences, they started The Other Brother Company. The oil is a blend specially made for Bi-Rite that consists of five Tuscan olive varietals: Frantoio, Pendolino, Leccino, Maurino, and Ascolano. These olives are grown at the family orchards which are located in Templeton, CA and Monterey, CA. The olives are hand-picked and milled within hours after harvesting to yield an oil that is bright, bold, and buttery with notes of fresh garden herbs and tomatoes. It has a hearty, yet balanced, amount of pepper in the finish. Drizzle this oil on your favorite steak, it is especially delicious on rib-eye! Or use it as an oil for dipping.  Toss it with radicchio, tomatoes, eggplant, zucchini, greens, and roasted vegetables. Excellent in pasta and farro dishes, or as a finish on a bowl of soup. Marinate fresh goat cheese or feta in this buttery oil!BiRite-HOLIDAY-2015-hannakuh-235

Public Label Pinot Noir Sonoma County, CA 2014 | $21.99
Our Pinot Noir was sourced from the Olcese Vineyard, one of the oldest Pinot Noir vineyards in Sonoma. This vineyard was planted in 1974 to Martini clone, a California heritage clone of Pinot Noir. With this special vineyard, we asked one of the best Pinot Noir winemakers in California, Samantha Sheehan of Poe Wines, to make us a phenomenal wine for under $25. The result is a beautifully aromatic wine, with cherry and raspberry fruit notes to go along with a savory, earthy spice. We love this with a variety of foods, from salmon to pork chops.

Let’s Be Honest, Jackson’s Honest Chips Are Fantastic!

We can’t get enough of Colorado-based Jackson’s Honest Chips – the perfect accompaniment to summer picnics in the park, barbecues, and road trips.  Founded by mother-of-four Megan Reamer seeking an alternative to manufactured potato chips fried in highly-processed vegetable oils, Jackson’s Honest Chips began with experiments in the Reamer’s home kitchen, frying potatoes in the healthiest cooking oil they could find: coconut oil.

Wowed by the rich, deep, aromatic, potato flavors that came through in those first chips, the Reamers were instant fans of this perfectly balanced, salty, sweet, crunchy snack.  Using their proprietary “low and slow” cooking methods, Jackson’s Honest Chips are cooked in small batches at low temperature, hand-stirred as they cook.

The Reamers take Wendell Berry’s proclamation “Eating is an agricultural act,” to heart, sourcing potatoes from small family farmers using biodynamic or organic practices, and the highest grade coconut oil (100% organic!) from companies that use traditional extraction techniques and treat their soil and workers fairly.

Always non-GMO and organic, if ever there was a potato chip that makes you feel good, it’s Jackson’s Honest Chips.  Do you prefer your potatoes purple, sweet, or classic with sea salt? Try them all and find your favorite:

Jackson's Honest JH Purple Heirloom Jacksons Honest Sweet Potato JH Salt and Vin

  •  OG Sea Salt $4.99:  Organic U.S. grown potatoes that can only be produced during the growing season are what make these chips very special.  They often go from ground to shelf in less than week.  A simple potato chip, sure to satisfy.
  • Sweet Potato $4.99:  These beautiful orange spuds’ subtle sweetness is accentuated by cooking low and slow in organic coconut oil, then paired with a dash of sea salt for brightness, you’ve got yourself a delightfully crispy chip.
  • Purple Heirloom $4.99:  Grown 8,000 years ago in the Andes Mountains, purple potatoes were once reserved for Inca Kings!  Coconut oil is the perfect partner to this potato, giving it an unrivaled depth and buttery-rich finish.
  • Salt & Vinegar $4.99:  Made with apple cider vinegar because its sweet undertones pair well with the depth of organic coconut oil.

Easter Treats! Artisan-Made Chocolates & Baked Goods

Easter is this weekend, and we’ve got a ton of basket-worthy treats to help you celebrate!

PaintedEggsChocolat Moderne is a producer whose incredible chocolates I always bring in for holidays. Their flair for the decorative and decadent in both their product and packaging make them ideal candidates for an Easter basket centerpiece. This year we are stocking Chocolat Moderne’s Hand-Painted Purple Rose Swirl Egg, a sea-salted caramel with Halen Mon Sea Salt from the pure ocean currents of the Welsh Coast. We also have their Hand-Painted Yellow Rose Swirl Egg, a dark chocolate ganache from 72% Venezualan Cacao, and the 3-Pack of Hand-Painted Rose Swirl Eggs, which includes one each of the purple and yellow rose swirl eggs, as well as a pink egg with creamy dark chocolate ganache with raspberries. They are so beautiful they almost resemble fine painted china.

Frans1For chocolate bunnies, your first stop in our chocolate aisle is Fran’s Chocolates. Fran’s Dark Chocolate Bunny, an exceptionally smooth dark chocolate that balances subtly toasty notes with dark berry fruitiness, creates a luscious, long-lasting experience that closes on a note of bright citrus. It’s made with 38% cacao from single origin Venezuelan milk chocolate and is creamy and chocolaty with quiet notes of honey and caramel. And Fran’s also makes Easter eggs! Their Filled Easter Eggs are a decadent foil-wrapped collection of two peanut butter eggs, one hazelnut crunch egg and one caramel egg.

OliveBunnyPoco Dolce is a phenomenal San Francisco-based chocolate company whose confections we stock year-round. They are also getting in on the rabbit game for Easter with their amazingly smooth, hand-made Peanut Butter Rabbit, blending organic peanut butter with bittersweet chocolate and a touch of sea salt, and their beautiful, hand-crafted Olive Oil Bunny, made with California olive oil and a bittersweet chocolate that is velvety, rich and has a decadent texture you’ll remember long after Easter and spring have both passed by.

Rounding out our selection of Easter eggs are two other favorite chocolate producers of ours, world-renowned Vosges Chocolate and Bay Area legend Michael Recchiuti. We have Vosge’s The Goose’s Golden Eggs and their organic Wink of the Rabbit Caramel Eggs; Vosge’s deep, rich milk chocolate touched with soft caramel. From Recchiuti we’ll have the Egg Hunt Box, wherein Recchiuti’s egg-hunt designs adorn eight pieces of his signature Burnt Caramel Truffles. Each confection is a blend of Recchiuti’s dark, smokey caramel with 70% dark chocolate ganache-enrobed in semisweet chocolate.

flowers2HotCrossBunsFor bakery treat options, try the Colomba di Pasqua from Starter Bakery. This traditional Italian Easter Cake is the springtime counterpart of the popular Christmas dessert panettone. Starter Bakery’s version is a sweet bread coated with marzipan and studded with candied orange peel, almonds and pearl sugar. It’s hearty, filling and delectable – an Easter treat to be shared. And from the Bi-Rite Creamery, we will have our beautiful and delicious take on the traditional Easter treat of Hot Cross Buns. Ours are made with a rich, buttery yeasted dough, crossed on top and finished with warm spices and raisins. Bi-Rite Creamery’s Hot Cross Buns will be available Saturday and Sunday, April 19-20 ONLY, so don’t miss these iconic holiday buns!

Don’t forget we also have a full Easter Menu available, and we’ll be selling incredible local, organic, and sustainably-grown flowers and bouquets in front of Bi-Rite Market on 18th Street on Saturday and Sunday!

Happy Easter!

Join Us in Welcoming these New Products!

I’ve brought in numerous new products to both our 18th Street and Divisadero Street Markets recently, and I to encourage you to come by and explore them! They’re highlighted in displays marked “New and Exciting!” But if you can’t find what you’re looking for, ask any of our Staff to help you and to share a taste–we’re all really thrilled to welcome them to our shelves.

Some of the new items about which I’m the most excited include:

bianco shelfBianco DiNapoli Whole Peeled & Crushed Tomatoes

Bianco DiNapoli Tomatoes are organically grown and harvested on Cliff Fong’s family farm in Yolo County, California. Within hours of harvest, these plum-shaped tomatoes are washed, steam-peeled and hand selected at the Olam Tomato Processors cannery in Williams, California.  The tomatoes resulted from a partnership between Robert DiNapoli and Chris Bianco, a James Beard award-winning chef and founder of the acclaimed Pizzeria Bianco in Phoenix, Arizona.

These are organic tomatoes at a great price. Chris’s inspiration has always been working with fresh product from local producers, and in this case he just wanted to make a darn good tomato. The whole tomatoes are good for any kind of sauce or soup, while the crushed tomatoes are great for heavily-seasoned or spicy dishes.

Moonshadow Grove California Extra Virgin Olive Oil

Moonshadow Grove is located in Oroville, Butte County and is one of California’s historic premier organic olive groves. The organic and sustainably-grown olives on this grove are all hand-picked and sent to the mill within twenty-four hours of harvesting, resulting in their one-of-a-kind Ascolano Olive Oil that is very floral and aromatic with hints of stone and tropical fruit. The Miscela Blend is a custom blend of Mission, Manzanillo, and Ascolano olives; it has a buttery texture and notes of bitter greens and green olive, followed with flair by a peppery finish.

jam shelvesJams from The Jam Stand

The Jam Stand is Brooklyn’s happiest food company.  It began when two best friends breathed life into their concept to create a food company that’s a true reflection of themselves and their community.  They push the limits of what jam can be by combining unique flavors like blueberry and bourbon, Sriracha and peach, and banana and lime with a splash of rum.  Using fresh fruit from local farms, Jess and Sabrina’s jams are vibrant and can be used in many applications.

C&B’s Old Fashioned Tonic

Founder Erin Cochran makes this wonderful tonic in San Francisco’s Mission District, not far from our 18th Street Market.  It’s made with Cinchona bark (the natural form of quinine), pure agave nectar instead of corn syrup or cane sugar, and loads of citrus and lemongrass. C&B’s is perfect for cocktail enthusiasts, pairing delightfully with most base alcohols, while also standing on its own as a perfect substitute for an alcoholic beverage. Its complex flavor alone will whet your palate, and it will enliven any spirituous drink.

Bagels from Authentic Bagel Company

Breakfast-time guests on our grocery floor know that we make the most delicious bagel sandwiches in the Mission. In our quest to make them even better, we’ve recently switched bagel suppliers to Authentic Bagel Company. Authentic was recommended to us by several members of our staff and several of our longtime guests, so we requested some samples and found that everyone was blown away by their taste and texture.

Authentic was started by brothers Jason and Mark Scott, who have been working closely together in the food industry for ten years. While helping pack up their childhood house for their family’s move out west from the East Coast, the brothers stumbled upon a recipe handwritten by their grandmother for a bagel with a starter dough (a dough full of natural leavening yeasts and delicious fermentation that creates complex, flavorful, crusty breads). The brothers have added their own personality to their grandmother’s recipe by using a San Francisco sourdough starter, marrying the two coasts they call home to create a unique taste of their own. With its chewy crust and ideal density, and for only $0.99 for each bagel, this is a great bagel at a great price. And perhaps most exciting of all, Bi-Rite is the exclusive retailer/market to sell these bagels in the Bay Area. So stop in, grab one and ask our friendly Deli staff to use it to make you a sandwich!

hot cake shelfHot Cakes Preserved Meyer Lemon Salted Caramel Sauce

I’ve had a great time getting to know Hot Cakes founder Autumn Martin, who is one of the nicest people I’ve ever met. And to top it off, Hot Cakes makes an absolutely fantastic product–one of the best caramel sauces you’ll ever try!  Made with lots of love in very small batches, the flavors of this caramel sauce are perfectly balanced–not an easy feat when marrying complex citrus with the sweetness of caramel.  Autumn has built a brand that is committed to supporting local and organic farming through the creation of fine, innovative desserts, and she has spent many hours volunteering on farms both locally and abroad to understand the true meaning of sustainable agriculture. Her commitment to building relationships with farmers, friends, customers, and purveyors is inspiring.

This luscious caramel sauce has perfectly-balanced flavors and a phenomenally pleasing texture. Putting it on top of vanilla ice cream would be an obvious choice, but for a decadent indulgence, I’d also suggest trying it with Bi-Rite Creamery‘s Honey Lavender, Vanilla, or Ginger Ice Creams, all available in our ice cream case.

New Nana Joe’s Chef’s Blend–Featuring Sam Mogannam!

Local granola producer Michelle Pusateri of Nana Joe’s is a great friends of ours, and she makes wonderful products that we really love and are huge favorites of our guests.  Based here in San Francisco, Michelle exemplifies the small, hands-on, community-oriented approach that we admire when producing her outstanding granola. We’ve been stocking Nana Joe’s since they first opened their doors, so we’re very excited to have collaborated with Michelle in a new way to produce a great new granola.

Nana Joe's michelle

Michelle of Nana Joe’s

Each month, Michelle collaborates with a San Francisco chef to create a special Chef’s Blend Granola. She’s already worked with some of the best chefs in San Francisco, and now we can add our very own Sam Mogannam to that list. Sam is not just the founder of Bi-Rite Market, he’s also my brother! He’s also a fixture in and passionate supporter of the local food community, and a mentor for budding food entrepreneurs. Before founding Bi-Rite, Sam was a chef at his own restaurant, and co-author of Eat Good Food, the grocery buyer’s guide that is available on the shelves at our Markets.

Sam Mogannam

We’re honored to have Sam join the distinguished ranks of San Francisco chefs who have created granola recipes for Nana Joe’s Chef’s Blends. We’re thankful to count Michelle and the crew at Nana Joe’s as friends and grateful that we get to stock their granola on our shelves. Says Sam, “I wanted to work with Nana Joe’s because I know the quality and integrity of the final product is guaranteed to be GOOD. The ingredients I chose are an inspiration from my Mother and a blend of my favorite Mediterranean flavors. Enjoy!”

Nana Joe's shelf

Sam’s granola recipe includes certified gluten-free oats, along with the following organic ingredients: toasted almonds, Grade B maple syrup, extra virgin olive oil, dried apricots, Medjool dates, toasted sesame seeds, crystalized ginger, fennel pollen and Maldon Sea Salt.

Sam’s Chef’s Blend will only be available temporarily, so make sure to get some soon. You can pick it up at either of our Markets. It’s not to be missed!
