Everything you need to know about December Festivities

The December holidays are upon us! This year, you’re sweater can be ugly, but your food doesn’t have to be! Whether you celebrate Christmas, Hanukkah, Kwanza, the Winter Solstice, or simply hop from holiday party to holiday party, we want to make your holidays as convenient and easy as possible.  Read on for answers below to your most frequently asked questions and then some, from all the logistics including our complete meal solutions, holiday menus, gift ideas, how to give back to the community by supporting our fifth annual Toy Drive, and more.

When are you open?
Christmas: We’re open 9am to 9pm almost every day of December except Christmas Eve and Day. We’re open 9am to 5pm on Christmas Eve and closed on Christmas Day. We’re open as usual at 9am on 12/26, the day after Christmas.

New Year: We’re open 9am to 9pm on New Year’s Eve and 10am to 6pm on New Year’s Day.

You can now pre-order via our convenient NEW e-commerce website for in-store pick-up. Since internet never sleeps, 3am Christmas dinner shopping just got a whole lot easier!

How do I place a Christmas or Hanukkah menu order without having a meltdown in the wine aisle?
Pre-orders open on our Holiday E-Commerce site on 11/27 for all December Holiday and Gift Ordering. Stay in your pajamas, grab that extra bowl of cereal, and peruse our market offerings from your own personal internet technology!

What are the pick-up times for Hanukkah, Christmas, and New Year’s orders?

  • Order pick-up dates for the Hanukkah Menu are Friday 12/23 – Monday 1/1
  • Web pre-ordering for the Hanukkah Menu ends Sunday 12/22 at 5pm
  • Order pick-up dates for Christmas are Friday 12/16 – Saturday 12/24 (We’re closed Christmas Day, we’re closed!)
  • Web pre-ordering for the Christmas Menu ends Friday 12/23 at 4pm
  • Orders for turkeys and geese are taken until we sell out – we will sell out of specific sizes and types, so get your orders in sooner rather than later!
  • A 24-hour pick-up window will apply for all orders (so keep in mind you can’t place an order on Friday 12/20 at 9pm for Saturday 12/21 10am pick-up).

How do I go about picking up my December Holiday order?
You can choose which Market (18th or Divisadero), and specify your pick-up date and time during the checkout process on shop.biritemarket.com or over the phone.

If I ordered something for Tuesday and can’t make it till Wednesday, is that ok? What do I need to do?
No problem! Simply log into your account on shop.biritemarket.com and update your preorder with the new date.

California Dungeness Crab season is here and gosh, they are beautiful! After a sad crab-less season last year, we’ve got sweet, succulent, and meaty crabs this time around and we’re so ready to make the most of it. Get ‘em whole or get ‘em cracked and cleaned so all you need to do is melt the butter, bring out the good bread and wine and you’ve got a proper feast.

What’s the deal with Prime Rib? I’m equal parts awed and terrified…
We’ve got your back, or rather your rib? We threw together a Black Tie Dinner Kit so you can pair your Prime Rib magnificence with a bright winter salad, some cheesy, truffle-y potatoes, the best confections this side of the Bay, and eat a fairly epic meal without pulling your hair out at 4pm on Christmas Eve.

Each rib weights about 1.25-2lb and we usually recommend 1lb per person. The beef is hormone/antibiotic free, grass-fed for 18-24 months and then grain-finished. We made a pretty sweet video to walk you through cooking your holiday Prime Rib AND you can find detailed cooking instructions at the markets in handy postcard form, easy!

I want a really good, responsible bird for the holidays, you know? The kind I can take home to my parents and cleans up real nice for Christmas dinner, no argyle involved.
Our BN Ranch Heritage Turkey is the best turkey we know, with intensely flavorful meat and the highest standards of sustainable ranching to its credit. We also have BN Ranch Broad-Breasted Turkeys for folks that want the benefits of a BN Ranch bird but prefer more white meat. Lastly, we have a select number of Mary’s Organic and Free-Range Turkeys – a great, clean bird, at a more affordable price. All of our turkeys are always fresh and never frozen. If Turkeys aren’t your bird of choice, we have Muscovy and Liberty Ducks this year from some of California’s best poultry farmers too. Only responsible, tasty birds in our kitchens!

There are a few things better than brisket. Namely, leftover breakfast brisket, the undying street cred of a well-made brisket, the memory of that amazing BN Ranch brisket, and tamales with brisket? Let us do the heavy lifting and slow cook that brisket to perfection for you, or you can put on your big kid pants and cook this beauty yourself. Either way, you can’t go wrong with our brisket, we’re not biased or anything.

What we’re really psyched about is farm-to-table American Caviar and some real good Champagne to wash it down with. Throw it back to the early 2000s with champs and cav! Plus, you know the Markets will be whipping up perfect party bites the week of to round out your meal.

What cheeses can I bring to ugly sweater parties? Trying to step up my cheese game this year to offset this heinous sweater…
For us, the holidays are about celebrating the seasonal Alpine cheeses that our Cheese Buyer works so hard to bring us. The incredibly unique, 250-pound wheel of Slow Food designated Gotthelf Emmentaler – an intense and nutty cheese that puts the industrially-produced emmethalers of the world to shame is a super special, seasonal staff favorite. But really, anything on our Cheese Course has been curated to pair beautifully with a holiday meal, with a fantastic origin story.

What wines do I take to my in-laws’ Christmukkah dinner?

Pixie Tangerines, Citrus Sunrise, & a Creamery Surprise!

Since the new year we’ve been crazy about citrus throughout the Bi-Rite Family of Businesses.  There are still over 20 varieties of citrus on the shelves at the Markets and some great surprises yet to come, but the season will start to wind down as we head into March. One of the most exciting parts of the California Citrus Experience celebration at Bi-Rite is that it comes to an end with one of the best-tasting varieties of the entire season: the Pixie Tangerine, a small, seedless tangerine with wonderful juice and super sweet flavor!

Pixie Tangerines

Led by Jim Churchill “The Tangerine Man,” a group of dedicated small farmers work collaboratively to get these sugar bombs to markets throughout California. Located in the mountains of Ojai, California, these 40 farms (some as small as just a handful of trees) harvest their fruit when it’s at peak flavor. We’ve been lucky enough to build a solid, farm-direct relationship with Churchill Orchard that allows us to get freshly-picked organic Pixies delivered straight to the markets. You would think that a piece of fruit that tastes so good would be sold all over the place, but this variety has its limitations, which turns off a lot of commercial growers. The trees take at least 4 years to produce fruit after planting, and closer to 8 years before they produce really healthy crops. Plus the Pixie is an “alternating bearing” crop, which means it has a heavy harvest one year and a light harvest the next. But the harvest is just starting this year, so we’ll have fruit in both Markets through March!

Cheese Experience

Many of our guest’s taste buds are familiar with Essex Street Cheese Company’s selection of imported cheeses. Two of the most popular cheeses in our Markets are Marcel Petite Essex Comte and L’Amuse Signature Gouda.  These beautiful wheels are masterfully matured for incomparable flavors in Europe, then hand-selected for our Markets by the fine folks at Essex Street. Essex Comte and L’Amuse Signature Gouda are truly the best of their bunch.

IMG_7880These well-rounded and distinctive flavor profiles are the legacy of the late Daphne Zepos – one of America’s most beloved cheese advocates.  Daphne was an educator and importer with a palate and spirit that inspired many of today’s top cheese professionals.  She even taught our very own Sam Mogannam how to taste cheese with all five senses, and a deep respect for the work that a truly skilled farmer, cheesemaker, and affineur put into the process of creating stunning cheeses.  Daphne’s appreciation of fine cheese lives on in the Essex Street Cheese selections, and her legacy of education led to the creation of the Daphne Zepos Teaching Award.  The DZTA is an educational fund that grants an award to a cheese professional every year.  The winner is tasked with travelling to Europe to study cheese craft. The winner must then commit themselves to educating other budding cheese professionals upon their return.  Those who’ve been granted the opportunity thus far have studied Basque sheep herding and cheese making traditions, styles of cheese affinage across Europe, and native cheese cultures used in cheese making.

Enjoying the Peak of Tomato Season

IMG_5651One of the most exciting times of year in the Bay Area is when the local farms start harvesting tomatoes in early June. By the time September rolls around, the local tomato season has hit its peak. All the local farmers from the Pescadero Coast to the Sierra foothills have vine-ripened tomatoes that offer different flavors depending on the growing practices and climate. Throughout September in at both Bi-Rite Markets, we are celebrating the Tomato Triple Play, which highlights three different tomato crops— Heirloom, Cherry, and Dry-Farmed Early Girls. All of the tomatoes we sell during the season come straight off the field to our shelves, allowing our growers to let them stay on the plant a little longer and develop that perfect flavor before picking. Heirloom Tomatoes are an open-pollinated variety that have been circulating among farmers and backyard gardeners for more than 50 years—and many of the varieties were introduced before 1940! Heirlooms are not only important because they offer us so many different shapes and sizes to cook with, but they allow us to maintain genetic diversity in the agricultural world. The Cherokee Purple Tomato is one of the most popular. With its thin skin and meaty texture, the juicy, acidic flesh offers a rich, old-fashioned sweet flavor. They take BLTs and Caprese salads to the next level of enjoyment.

We are currently getting Cherokee Purples from Bluehouse Farm in Pescadero and Mariquita Farm in Watsonville. Another popular heirloom is the Brandywine Tomato.  Farmers love them because they get huge on the plants and the meaty flesh doesn’t break down easily when ripe.  Don’t let the large size fool you! These are one of the sweetest tomatoes out there. The Green Zebra Tomato is a small variety that starts out green but turns yellow with green stripes when it’s ripe. The sweet/tart flavor works really well with salsas and salads.

Our guests really get excited about tomatoes when the Dry-farm Early Girls hit our shelves! About 10 years ago we started selling these tomatoes from Two Dog Farm in Davenport. They’re the first farm in Northern California to grow these Early Girls, and over the past 5 years more farms have made the effort. Dry-farming is a farming technique used in a lot of climates where there’s not much rain. The roots of the plants can tap into moisture in the soil and go through the entire growing season with no irrigation. Two Dog Farm grows on the coast, getting moisture from the fog and the high water table in the soil allowing them to never water. The resulting tomatoes are usually smaller and lower in yield, but they pack pleasantly intense flavor and a dense, firm texture.

Dry-farm Early Girls

Unfortunately, Two Dog Farm lost a majority of its crop this season due to the heat wave that hit the Bay Area. Crops grown on the cool coast can’t handle the heat! But we’ll have plenty of the tasty Dry-farm Early Girls from Live Earth Farm, Bluehouse Farm, and Tomatero Farm for the rest of the season.

When Heirlooms and Dry-farm Tomatoes are in full swing the Cherry Tomato varieties just don’t get the same amount of love. Cherry Tomatoes might be one of the easiest plants to grow, but keeping up with the daily harvesting and their delicate nature can make them a challenging crop for farmers. Similar to Heirlooms, there are a ton of different varieties but only a handful of them make sense for the retail marketplace. The Sweet 100 Tomato is one of the most popular for farmers to grow because they are a classic red tomato, extra sweet, and keep producing large clusters of fruit for most of the season. The Sun Gold Cherry Tomato is the most popular non-red tomato out there, with their sweet-but-tart flavor that explodes in your mouth.

The Yellow Pear Cherry Tomato is a teardrop-shaped tomato with tangy flavor and low acidity. You can get them along with our Sweet 100 and Sun Golds combined in a mixed baskets. Cherry Tomatoes are not only a perfect snack for kids, but they can add a flare to pasta dishes and almost any salad. They’re especially wonderful in cucumber salads!

One of the best parts of having all these local tomatoes at the Bi-Rite is that we get use them throughout the Family of Businesses—from the world-famous Gazpacho in the Deli to the Mozzarella and Cherry Tomato Skewers on the Bi-Rite Catering Summer menu. We also have an endless number of grocery items that enhance the tomato experience like the Public Label Tuscan Style Olive oil, Pt. Reyes Mozzarella, and Josey Baker’s Breads.  Do you know which tomato variety is your favorite? New Catering Menu: Celebrating Spring’s Bounty

IMG_1605The birds are chirping, the grass is greener and the flowers are blooming; this means one thing. Spring is in the air and it’s time to celebrate! At Bi-Rite Catering we like to celebrate these moments with delicious food and great company, and we have some exciting announcements to make.

First, our new seasonal menu is here and truly mouthwatering. Fresh peak of season ingredients such as asparagus are used to create our delicious Savory Tartlets with Potato, Asparagus, Goat Cheese & Chive, and our Mini Baguette Sandwiches with Grilled Asparagus, Fromage Blanc, Roasted Mushrooms & Lemon Herb Pesto.  See our full new peak of season menu, which is available now, here.

Winter Brings Exciting New Catering Options!

butternutWhew! The holidays are finally over and we can all settle into our warm and cozies for a long nap, right? No way! What with the Super Bowl coming up and the Oscars right after that, there are tons of opportunities to throw a great party. Even if you’re looking to put on a smaller gathering of like-minded football or film lovers (or both!), Bi-Rite Catering’s new Peak-of-Season Menu is an easy choice to please every palate. And each platter and side dish serves around 12 to 15 people, so it’s easy to tailor quantities to your party size. It’s all local, delicious, and made to order!

Our seasonal Focaccia Flatbread with Braised Kale, Ricotta, Calabrian Chili, and Pecorino Cheese arrives at your door crisp and ready to serve.
